My Favorite One-Blender Baking
If you’re a fan of one-pot meal recipes, this healthy blender muffin recipe is for you. I call this one-blender baking. You toss all your base ingredients and blend it together, pour the batter in the muffin tins, top it off with your favorite fruits and nuts (and chocolate chips), pop it in the oven, and then enjoy when they’re ready. It’s that easy!

Main Ingredients
- 2 cups quick cooking or old fashioned oats
- 2 large very ripe bananas
- 2 large eggs
- 1 cup plain yogurt I use Greek for higher protein and a thicker consistency.
- 2-3 Tablespoon honey Feel free to use maple syrup or agave syrup.
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
Toppings
- 1 cup chopped fruits My faves: strawberries, peaches, blueberries, mangoes
- 1 cup dry ingredients My faves: sliced almonds, chocolate chips, chopped walnuts

Instructions
- Preheat oven 400F. Lightly grease muffin tins or use muffin liners.
- All ingredients (except toppings) into blender. Oats, bananas, eggs, yogurt, honey, baking powder, baking soda, vanilla extract, salt.
- Blend on HIGH to fully incorporate for 1 min. Check if sides are scraped down. Optional: Hand stir in partial chocolate chips into batter.
- Divide batter into muffin tins filling to 3/4 full. Top muffins with your favorite fruit and nut toppings.
- Bake 15 min, until top sets with toothpick insert into center. Place on wire rack and let muffins cool in pan for 10 min.
