This is such an easy granola recipe that’s not only delicious and healthy, but you’ll never want to waste your hard earned money on store bought granola again. Did I mention it’s also vegan, dairy-free, and egg-free? It’s made with whole grain oats, unrefined coconut oil, and naturally sweetened with maple syrup. Oh yea, and it’s entirely guilt-free.
I usually top granola over plain greek yogurt, eat it by the handful, or package it in mason jars and gift to friends and family during the holidays.
An easy, make-it-your-own-way, granola recipe. Feel free to use organic, gluten-free ingredients, or swap out the nuts and dried fruit for your favorite pairings. This is a vegan recipe, using unrefined coconut oil and naturally sweetened with maple syrup. This is also a good granola base recipe for flavor variations like spiced-gingerbread, vanilla almond, apple cinnamon, and cherry coconut.

Ingredients
- 4 cups old-fashioned rolled oats
- 2 cups raw nuts and or seeds (I use 1 cup sliced almonds and 1 cup pepitas)
- 1/2 teaspoon cinnamon
- 1 teaspoon sea salt
- 1/2 cup melted coconut oil
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup dried fruit (I use a mixture of dried cherries, chopped persimmons, raisins, mulberries)

Instructions
- Preheat the oven to 350 degrees F and line a large baking sheet with a silicone baking mat or parchment paper.
- Mix the dry ingredients in a large mixing bowl. Combine the oats, nuts/seeds, cinnamon, and salt. Stir to blend.
- Mix the wet ingredients in a cup. Combine the melted coconut oil, maple syrup, and vanilla extract and pour over the dry ingredients mixture in the mixing bowl. Mix thoroughly until everything is lightly coated.
- Pour the granola mixture on your baking sheet and spread it evenly. Place in the oven and let it bake until golden, about 23 minutes, stirring halfway.
- Take out the pan and let it cool completely. The granola will clump and crisp up as it cools. Once the granola cools completely, break it into pieces and stir in dried fruit.
Recipe Notes
Store the granola in an airtight container at room temperature for up to 3 weeks. If you’re anything like me, your granola won’t even make it that long. Your family and friends and will gobble it all up.
